Cracklin' Bran Sweet Potato Bake
- 2 cans (24 oz. each) sweet potatoes, drained and mashed
- 5 Tbs. margarine or butter, softened
- 1/4 C. orange juice
- 1/2 teaspoon salt
- 2 C. miniature marshmallows
- 1 C. Kellogg’s Cracklin’ Bran cereal, crushed to 1/2 cup
In large bowl of electric mixer, combine sweet potatoes, 4 Tbs. of the margarine, orange juice and salt. Beat until smooth. Stir in 1 C. of the marshmallows. Spread in 10 x 6 x 2 inch (1 1/2 qt.) glass baking dish. Top with remaining marshmallows. Melt remaining margarine. Combine with Cracklin’ Bran cereal. Sprinkle over marshmallows. Bake at 350 degrees for 20 minutes or until heated through.
