Cranberry Apple Cream Salad
Ingredients
- 1 3-oz. pkg. cherry gelatin
- 1/2 C. orange juice
- 1 8-oz. pkg. cream cheese, softened
- 1 8-oz. can whole berry cranberry sauCe
- 1/2 tsp. orange rind
- 1/4 tsp. salt
- 3 C. chopped unpeeled red apples
- 1 C. cottage cheese
Directions
Dissolve gelatin in 1 C. boiling water. Stir in orange juice. Beat cream cheese in small mixing bowl until soft and creamy. Beat in cranberry sauce until smooth. Add orange rind and salt, beat well. Add gelatin mixture in gradually, beating well. Chill until thickened. Fold in 2 cups apples. Pour into 4-cup ring mold. Chill until firm. Unmold onto lettuce-lined plate. Combine cotttage cheese and remaining 1 cup apples. Spoon into center of mold. Serve.
