An amazing fall cake that will really impress your guests. Serve with warm buttered rum sauce.

  • 4 Tbs. butter
  • 2 C. sugar
  • 4 C. flour
  • 6 tsp. baking powder
  • 1 tsp. salt
  • 2 C. milk
  • 2 tsp. vanilla
  • 16 oz. fresh cranberries
  • 2 Tbs. orange rind, grated

Preheat oven to 350 degrees.  Cream together butter and sugar.  Combine all dry ingredients.  Gradually add dry ingredients to butter mixture.  Add milk and vanilla.  Blend.  Gently fold in cranberries and orange rind.  Pour into a greased 9x13 inch cake pan.  Bake 45-55 minutes or until toothpick inserted into center comes out clean.  Serve at room temperature.
