  • 2 C. cranberries
  • 1/2 C. sugar
  • 1 1/3 C. orange juice
  • 3 1/2 C. all-purpose flour
  • 1 1/2 C. Splenda
  • 1 Tbs. baking powder
  • 2 eggs
  • 1 tsp. salt
  • 1/4 C. cooking oil
  • 1 Tbs. orange rind, grated
  • 2 C. mini semi-sweet chocolate
  • 1 tsp. baking soda

Preheat oven at 350 degrees F. Combine cranberries and 1/2 C. sugar. Set aside. Combine flour, 1 1/2 C. sugar, baking powder, baking soda, and salt in a mixing bowl. Stir well to blend. Beat eggs, orange juice, oil and grated orange rind together. Add to dry ingredients, stirring until just moistened. Fold in cranberry mixture and chocolate chips. Divide batter into loaf cake pan. Bake for 40 to 45 minutes. If you desire, sprinkle with powdered sugar.
