  • 1 ½ sticks butter, softened
  • 1 ½ C. brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • Dash salt
  • 1 ½ tsp. baking powder
  • 1 ½ C. all-purpose flour
  • ½ C. cranberries
  • 2 C. sweetened flaked coconut, toasted

Preheat oven to 350 degrees. In a large bowl, use an electric mixer to cream together butter and brown sugar until light and fluffy. Mix in eggs and vanilla. In a small bowl, combine flour, baking powder, and salt; gradually mix into batter. Stir in cranberries and coconut and pour batter into a greased baking pan. Bake for 25 to 30 minutes until set.
