Cranberry Orange Scones

Serve these up with a hot cup of tea and you have a lovely mid-morning snack!

Ingredients

  • 3 1/2 C. buttermilk pancake mix
  • 3 Tbs. sugar
  • zest of one orange
  • 1/4 C. unsalted butter, chilled and diced
  • 3/4 C. whole milk
  • 3/4 C. dried cranberries

Directions

Preheat oven to 400 degrees, then mix pancake mix sugar, and orange zest in a bowl.  Add pea-sized bits of butter into the mixture.  Add milk, combine, and fold in cranberries.  Dough will be sticky.  Place dough on a floured surface and pat into a 4x16 inch rectangle.  Cut into four 4x4 inch squares, then cut each square on a diagonal to create two triangles.  Place triangles on a cookie sheet and bake for about 12 minutes or until golden.


Serve with: Hot Spiced Tea and Orange Marmalade
