Cranberry Pecan Cheddar Cheese Spread

This is a wonderful and festive cheese spread best served with a hearty cracker. I have adapted this over the years for use on different occasions. Cranberries or Craisins make it a perfect Thanksgiving cheese spread.

  • 1 1/2 C. white cheddar cheese, shredded
  • 1/2 C. butter, softened
  • 1/2-3/4 C. whipped cream cheese,
  • 1/4 C. Dijon style mustard
  • 1/3 C. pecans, chopped
  • 1/2 C. Craisins

Place shredded cheese, softened butter, whipped cream cheese and mustard in small mixing bowl. Beat on low or mix by hand until blended. If too stiff add more cream cheese. Fold in pecans and Craisins. Refrigerate until serving. To serve, remove from refrigerator and let soften for 10 minutes. Use a hearty cracker.

  • There is something drastically wrong with this recipe -- probably 1/ cup of dijon mustard is incorrect--way too much. The mustard is overwhelming. I tried adding honey to help it but I had to throw the whole thing away. Waste of time and ingredients!
