Cranberry Relish

Get ready for a sweet, tangy, nutty, flavorful delight that can be eaten as a garnish with the main course, as a topping for ice cream, OR, like my kids LOVE it, in a cup for a between-meal snack! It's healthy, too - chock-full of vitamin C, and, if you add the nuts, protein.

Ingredients

  • 1 lb. fresh canberries, washed and sorted
  • 3 navel oranges
  • 1/4 - 1/2 C. sugar (to taste)
  • 1 C. walnuts or pecans, chopped (optional)

Directions

Place cranberries, oranges and sugar in a food processor. Grind until cranberries are evenly chopped. Do not over-process or the relish will become too wet. The cranberry relish should mound nicely in a serving spoon without being "drippy". Stir in the chopped nuts if desired.

Pour into a pretty serving bowl.

  • Make sure the oranges are peeled, and depending on how many cranberries are tossed out while washing and sorting, the contents of more than one 1-lb. pkg. may be needed to to obtain the best texture.
