Cranberry Relish/Gelatin Salad

This is wonderful no matter what time of year. If sugarless Jell-O and the pineapple in its own juice is used, your diabetic will be able to eat it as well.

Ingredients

  • 1 small pkg. red sugarless Jell-O
  • 1 can whole cranberries
  • 1 small can crushed pineapple in its own juice, drained and saved
  • 1 small red apple, diced
  • 1 C. walnuts, chopped
  • 1 C. celery, finely chopped

Directions

Prepare red Jell-O as directed on box except when adding the cold cup of water, instead, use as much of the pineapple juice as possible, using ice or cold water if there is not enough juice. When the Jell-O has set to at least the consistency of an unbeaten egg white (almost set), use a mixer to whip it until frothy. Mix in the whole cranberries, nuts, apple, celery and drained pineapple. Refrigerate until hard set.
