Ingredients

  • 3/4 C. buttermilk
  • 1 egg
  • 3/4 C. flour
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 C. butter
  • 1 C. fresh or frozen cranberries, coarsely chopped
  • 1/2 C. sugar
  • 1 orange, zested
  • 1 T. butter, melted
  • 1/4 C. icing sugar

Preheat your oven to 375°F. In a small bowl, mix together buttermilk with egg and set aside. In a large bowl, sift together flour, baking powder, baking soda, and salt. Using a fork, cut in 1/2-cup of butter and combine until mixture is crumbled. Fold in cranberries, sugar, and orange zest. Slowly add buttermilk mixture until just combined. Form dough into a ball and transfer to a lightly floured surface. Knead 10 times and divide into two large circles, one inch thick. Place onto a large cookie sheet. Carefully slice the top of each dough circle to create eight wedges. Bake for 20 minutes. Let stand for five minutes before brushing with melted butter and icing sugar.
