  • Crust:
  • 2 C. all purpose flour
  • 1/2 C. light brown sugar, packed
  • 1/2 tsp. salt
  • 3/4 C. butter, cold and unsalted
  • Filling:
  • 1 C. butter, unsalted
  • 1 1/2 C. sugar
  • 1/4 C. light corn syrup
  • 1/2 tsp. salt
  • 1 1/2 C. fresh cranberries, coarsely chopped
  • 1 tsp. vanilla
  • 3 C. pecans, toasted, cooled and coarsely chopped
  • 1 C. coconut, flaked

Preheat oven to 350 degrees F. Line a 9 X 13-inch baking pan with parchment paper and spray bottom. In bowl of food processor, place the flour, brown sugar, and salt and process to combine. Add the cold butter and pulse until the pastry forms clumps. Transfer the pastry to the prepared pan and evenly press the pastry onto the bottom of the pan. Cover and place the pastry crust in the freezer for 15 minutes. Bake for about 20 minutes in oven or until golden.

For filling, melt butter in saucepan over medium heat. Stir in sugar, corn syrup and salt. Boil over medium heat while stirring for about 7 to 8 minutes. Remove from heat. Mix in vanilla and pecans. Stir until well coated. Spread on caramel topping crust base and let it cool before cutting into bars.
