  • 1 1/4 cups chopped Bramley apples
  • 1/2 cup dried cherries
  • 1/2 cup Greek yogurt
  • 1 lg. egg, whisked
  • 1/2 stick butter, melted
  • 3 tablespoons sugar, divided
  • 1 package quick-rise active dry yeast
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 tablespoon whole milk

Preheat the oven to 350 degrees, and prepare cookie sheets by spraying liberally with cooking spray.

Place apples and cherries into a blender or food processor and chop roughly. Set aside.

In a stand mixer, combine Greek yogurt, egg, butter, and sugar. Add the vanilla, yeast, and flour. When it forms a ball, lower the mixer speed and allow to knead for about 1 minute. Cover with plastic and allow to sit at room temperature for 20 minutes.

After 20 minutes, cut dough into thirds, and roll one part into a circle that's a foot in diameter. Spread one third of the apple and cherry mix out onto the circle of dough. Cut into 8 slices and roll each wedge, starting with the larger side. Turn the edges inward.

Repeat two more times, and place cookies onto prepared cookie sheet. Brush with the remaining whole milk and cinnamon and bake for 19 minutes.
