Cream Cheese And Scallion Mashed Potatoes

- 3 lbs baby Yukon gold potatoes
- 8 oz cream cheese
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1 cup scallions, sliced
Boil potatoes until tender. Add salt once the water comes to a boil. Drain potatoes. Peel if needed.
Mash the potatoes, adding butter, cream and cheese. Mash until smooth. Add the scallions and stir into the potato mixture.
Salt to taste and serve the mashed potatoes hot.
