Cream Cheese Hummus
- 1 15 1/2 oz. can garbanzos, drained and rinsed, reserve liquid
- 1 3 oz. pkg. regular or reduced-fat cream cheese, at room temperature
- 1 Tbs. lemon juice
- 1/4 C. minced green onions (white and pale green parts only)
- 1-2 tsp. prepared horseradish
- About 1/2 tsp. salt
In a food processor or blender, whirl garbanzos, 1/4 C. reserved liquid, cream cheese, lemon juice, green onions, 1 tsp. horseradish, and salt until smooth. Taste, and add more horseradish and salt if desired.
Yield: 1 1/2 C.
