Great as a sandwich spread, with salt and horseradish.

  • 1 15 1/2 oz. can garbanzos, drained and rinsed, reserve liquid
  • 1 3 oz. pkg. regular or reduced-fat cream cheese, at room temperature
  • 1 Tbs. lemon juice
  • 1/4 C. minced green onions (white and pale green parts only)
  • 1-2 tsp. prepared horseradish
  • About 1/2 tsp. salt

In a food processor or blender, whirl garbanzos, 1/4 C. reserved liquid, cream cheese, lemon juice, green onions, 1 tsp. horseradish, and salt until smooth. Taste, and add more horseradish and salt if desired.

Yield: 1 1/2 C.
