Cream of Broccoli Soup
Ingredients
- 2 bunches fresh broccoli
- 6 C. chicken broth
- 1 stick butter
- 2/3 C. flour
- 1 qt. half and half
- 1 C. sharp cheddar cheese, shredded
- 2 C. diced ham
- salt and pepper to taste
Directions
Use a heavy 6-qt. pot. Wash broccoli and cut into small bite size pieces. Cook 5 minutes. Drain; save the liquid from this in case you need to thin it out a little. In another saucepan, melt butter and mix with flour. Add broth and whisk until thickened. Add cheese. Stir until cheese is melted. Add half and half. Stir over low heat. Add all of this to partially cooked broccoli. Add ham. Simmer for 10 minutes.
