Cream of Pumpkin Soup

This is a rich soup reminiscent of your traditional pumpkin pie.

Ingredients

  • 1 lg. can solid packed Pumpkin
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1/4-1/2 C. sugar
  • 1 can evaporated milk
  • 1 1/2 C. half and half cream
  • 6–8 C. chicken broth
  • 1/2 tsp. almond extract (optional)

Directions

Combine all ingredients and simmer on medium heat until well heated. Serve with a dollop of whipped cream.
