You could use packaged waffles...but these only take just minutes to make and are great with the creamed beef.This combination is great anytime ...but is especially nice for a quiet breakfast or a candle light dinner for your special Valentine !

Ingredients

  • Creamed Beef:
  • 1/2 C. chopped onion
  • 1/2 C. chopped celery
  • 2 3-oz. pkg. dried beef, cut into bite size pieces
  • 1/2 C. butter
  • 1/2 C. flour
  • 5 C. half and half
  • Light and Crisp Waffles:
  • 2 egg yolks
  • 2 C. milk
  • 2 C. flour
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1/3 C. oil
  • 2 egg whites, stiffly beaten

For Creamed Beef:

Cook onion and celery in a microwave-safe bowl, on high for 3-4 minutes. until tender. Set aside. Brown beef, in a large skillet or saucepan, on high heat, until its browned and looks like half the amount. Add onion and celery, stir to combine. Cook for about 1 minute. Cook and use a whisk and slowly add all of the half n half. Continue to cook, while using the whisk, until thickened and smooth (about 4-5 minutes). Do not add salt until creamed beef is thickened, then add salt and pepper if needed.

For Waffles:

Preheat waffle maker. Put all of the ingredients into a large mixer bowl, except the beaten egg whites. Beat on low until moistened. increase to medium, mix until smooth. By hand fold in the egg whites. Pour a 1/2 C. of batter into the center of the grid. Close waffle maker, bake until golden (3-3 1/2 minutes). Be sure to grease the grid now and then between baking waffles, to make sure they don't stick. Serve hot with creamed beef.
