Creamy Almond Chicken

Ingredients
- 2 whole chicken breasts, skinned, boned, halved, and flattened
- 1 sm. onion, chopped
- 1 tsp. dried or fresh rosemary
- one 10 1/2-oz. can condensed cream of celery soup
- 1/2 C. light cream
- 1/2 tsp. poultry seasoning
- 1/2 C. flavored bread crumbs
- 1/4 C. sliced almonds
- 2 tsp. butter
- sprig of chopped parsley
Directions
In a flat dish, press bread crumbs into chicken on all sides. In a bowl, add cream of celery soup, cream, poultry seasoning, rosemary, parsley, and onion. Mix well and reserve. Lay out chicken breasts in an oven-proof casserole dish. Spoon soup mixture on and around chicken. Sprinkle with almonds and dot with butter. Bake in a preheated 400-degree oven for 20 minutes. Remove chicken from casserole dish to heated serving plates. Spoon sauce on and around chicken.
