  • 5 C. chicken broth
  • 1 C. onion, finely diced
  • 3 C. broccoli, finely chopped
  • ½ C. carrots, finely diced
  • 3 cloves garlic, minced
  • ½ tsp. nutmeg
  • ½ stick butter
  • ¼ C. flour
  • 1 C. half and half
  • 1 ½ C. cheddar cheese, shredded
  • Salt and pepper to taste

In a saucepan, add chicken broth, onion, broccoli, carrots, garlic, and nutmeg. Bring broth to a boil, reduce heat, and simmer for 15 minutes. In a separate large saucepan, melt butter and whisk in flour. Once your broth has been heated, slowly pour into the large saucepan with butter mixture. Avoid adding all of the vegetables from the broth at first to allow the soup to thicken. Whisk soup, add half and half, salt, pepper, and vegetables. Mix until well incorporated and evenly heated. Before freezing, allow soup to cool. Pour into gallon-sized freezer bags. Simply reheat on stove top when needed and serve with fresh steamed broccoli and top with cheddar cheese.
