Who said it's too early to take out the potato salad? Even if summer if far away, we think that this creamy side dish will pair nicely with a home-cooked chicken.

  • 5 lb. Russet potatoes, peeled and diced
  • 2 C. yellow onion, chopped
  • 1 C. celery, chopped
  • 3/4 C. sweet pickle relish
  • 1 C. mayonnaise
  • 2 tsp. prepared mustard
  • 1 tsp. salt
  • 1/2 tsp. pepper

Place potatoes in large pot with water. Bring to boil over high heat. Boil for 8 to 10 minutes or until potatoes are tender. Drain. In a large bowl, mix potatoes, onion, celery and relish. In a small bowl, combine mayonnaise and remaining ingredients. Toss mayonnaise mixture with potato salad. Cover and chill for 2 hours before serving.
