  • 12 oz button mushrooms
  • 1 sliced onion
  • 4 C chicken stock
  • 6 T butter
  • 1 tsp thyme
  • 1 C heavy cream
  • Salt and pepper, to taste

In a medium-sized saucepan, melt two tablespoons of butter. Then, add the onion, cooking it for about three to five minutes until it’s soft and translucent. Then, add mushrooms and the rest of the butter. Cook the mushrooms for about eight minutes and then add the chicken stock, heavy cream, and parsley. Bring the mixture to a boil and cook for about an hour.

After cooking for an hour, remove soup from heat. Blend the soup in a blender at high speed until it’s smooth. After mixture is smooth, pour the soup back into the saucepan and bring to a simmer. Season soup with salt and pepper and serve hot.
