Creamy Banana Bread

The combination of bananas and cream cheese make this a very moist bread.

Ingredients

  • 1/2 C. margarine, softened
  • 1 (8 oz.) package cream cheese, softened
  • 1 1/4 C. white sugar
  • 2 eggs
  • 1 C. mashed bananas
  • 1 tsp. vanilla extract
  • 2 1/4 C. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 C. chopped pecans
  • 2 Tbs. brown sugar
  • 2 tsp. ground cinnamon

Directions

Cream the butter or margarine and cream cheese together. Gradually add the white sugar, and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla. Add flour, baking powder, and soda; mix until batter is just moist. In a small bowl, mix together chopped pecans, 2 Tbs. brown sugar, and cinnamon. Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle pecan mixture over batter in pans, and top with remaining batter. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until an inserted toothpick comes out clean.

  • I put the nuts, brown sugar and cinnamon in the batter instead of on top of the batter before baking. My husband can't get enough of this bread!! Yummy-licious!!

  • I made this bfor my family this morning and everyone loved it. So I took some over to my mom's house and my parents loved it as well as my sisters. I will have to make another loaf tomorrow since everyone gobbled it up and my family wants more!!

  • To make this sugar free or lower in sugar, you can substitute splenda for the sugar and brown sugar. Just follow the package on Splenda for amounts.
