  • 3 lbs. chuck roast, boneless and thinly sliced
  • 3/4 cup baby corn
  • 1 red bell pepper, sliced
  • 2 tsp. parsley, minced
  • 2 cloves garlic, minced
  • 1 cup cerignola olives, quartered
  • 1/4 cup soy sauce
  • 1 cup vegetable broth
  • 2 tbsp. cornstarch
  • ¼ cup water

Combine broth, soy sauce, and garlic in a bowl. Mix well
Place beef, peppers, corn, and parsley in crockpot and pour sauce over
Cover and cook on low for 2 hours
Combine cornstarch and water in bowl. Mix
Add cornstarch mixture to the crockpot and cook for 1 more hour
Serve over rice if preferred
