Creamy Broccoli Casserole
Ingredients
- 1 bunch (1 ½ lb.) broccoli or 2 (10 oz.) packages frozen broccoli
- ¼ tsp. salt
- 1 (10 ¾ oz. can cream of chicken soup
- ½ C. mayonnaise
- ¼ tsp. curry powder
- 2 Tbs. lemon juice
- ¼ C. soft toasted bread crumbs
- 2 Tbs. melted butter
Directions
Peal and slice fresh broccoli into ¼ inch thick pieces. Cook in small amount of boiling water with salt until tender. Drain and place in 12 x 8 x2 inch casserole dish. Mix soup, mayonnaise and curry powder. Sprinkle lemon juice over broccoli and pour sauce over top. Sprinkle with bread crumbs and drizzle with melted butter Bake at 350 degrees for 20 minutes.
Yeld: 6 servings.
