Creamy Cabbage and Potatoes

Ingredients
- 3 Tbs. olive oil
- 1/2 head med. cabbage, thinly sliced
- 1 med. red onion, chopped
- 3 med. all-purpose potatoes, peeled and cut into bite-size pieces
- 1/2 C. water
- salt
- pepper
Directions
Pour the oil into a large skillet. Add the onion and cook over medium heat, stirring frequently, for 5 minutes or until softened. Stir in potatoes, cabbage, water and salt and pepper to taste. Cover and cook for 30 minutes or until the vegetables become soft. Serve hot.
