Creamy Cabbage and Potatoes

This side dish is made in a skillet and won't take more than 40 minutes to prepare.

4-6 servings

Ingredients

  • 3 Tbs. olive oil
  • 1/2 head med. cabbage, thinly sliced
  • 1 med. red onion, chopped
  • 3 med. all-purpose potatoes, peeled and cut into bite-size pieces
  • 1/2 C. water
  • salt
  • pepper

Directions

Pour the oil into a large skillet. Add the onion and cook over medium heat, stirring frequently, for 5 minutes or until softened. Stir in potatoes, cabbage, water and salt and pepper to taste. Cover and cook for 30 minutes or until the vegetables become soft. Serve hot.
