  • 1 lb. tonnarelli pasta
  • 2 C. Pecorino Romano cheese
  • 4 Tbs. butter
  • 1 Tbs. olive oil
  • Fresh ground pepper to taste
  • Chopped parsley for garnish

In a large pot, bring water to a boil and add in the tonnarelli and olive oil. In a medium sized bowl, mix 1 ½ cups of the cheese with ¾ cups of the boiling water. Stir quickly until it’s smooth. Strain the pasta (reserving some of the hot water - keep some boiling on the stove). Mix the pasta and cheese sauce, stirring quickly and adding small spoonfuls of water at a time until everything is melted. Sprinkle with the remaining Pecorino cheese and top with parsley.
