This dip diverges from the traditional store bought French onion dip and takes a dive into caramelized heaven. The caramelizing the onions brings a rich, sweet flavor out of the onions that adds depth to the creamy dip. Enjoy with chips, pretzels, or whatever foods you like to dip with!

Caramelizing the onions is a meticulous, but rewarding process. Start by peeling the skin off of your onions and cutting them into 1/8 inch slices. Chop up the sage very finely.

Over medium-low heat, warm up the vegetable oil in a large frying pan and then add in the onions. Make sure that you don't crowd the onions, caramelize in batches or in separate pans if you have to. Add in the sage and cover and cook for 45 minutes, stirring every so often.

While the onions are caramelizing, whisk together the mayonnaise, sour cream, salt, and pepper. Set in refrigerator.

The onions will be done when they are a rich brown color, and once the have reached this, remove from heat and allow to cool.

When the onions have cooled, pour them into the bowl with the rest of the dip and stir. Taste, add seasoning as needed, and serve.
