  • 1 Medium Onion, chopped
  • 1 lb. Medium Carrots, peeled and sliced
  • 1 tsp. Ground Ginger
  • 1 tsp. Ground Coriander
  • 4 C. Vegetable Stock
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

Warm the olive oil in a large saucepan over medium-high heat. Add the onions and sauté until tender. Stir in the carrots, ginger, and coriander. Pour the vegetable stock over the mixture. Bring to a boil, then reduce heat to low. Let soup mixture simmer until carrots are fork-tender. Carefully pour the soup mixture into a food processor or high-powered blender, and puree until smooth. Season soup with salt and pepper if needed.
