Creamy Cauliflower

Ingredients
- 1 med. cauliflower
- 3 Tbs. olive oil
- 1/4 C. water
- 2 garlic cloves, thinly sliced
- salt
- 1/2 C. mild black olives, pitted and sliced
- 2 Tbs. chopped parsley
Directions
Cut the cauliflower into 2-inch florets. Trim off the ends of the stems. Cut thick stems crosswise into 1/4-inch slices. Pour oil into a large skillet and add the cauliflower. Cook over medium heat until cauliflower starts to brown. Add the water, garlic and a pinch of salt. Cover and cook over low heat until cauliflower is tender, about 10 minutes. Add olives and parsley and toss well. Cook, uncovered, for 2 more minutes. Stir occasionally. Serve hot.
