Creamy Cauliflower Soup
Ingredients
- 1 medium cauliflower
- 1 small onion, chopped
- 2 C. fresh or frozen corn
- 3 15 oz. cans vegetable or chicken stock
- 2 Tbs. olive oil
- 1 tsp. paprika
- Salt and pepper, to taste
- Fresh dill for garnish
Directions
Saute onions with oil for 5 minutes. Chop clean cauliflower into small pieces and add to the pot with paprika and mix. Saute for 3 minutes, then add corn, salt and pepper to taste and cover with stock. Let cook for 20 minutes or cauliflower its soft. Let it cool and put in the mixer and mix until soup gets very creamy. You can also use an immersion blender. Pour soup into the serving bowl and garnish with fresh dill.
