  • 3 garlic cloves, roughly chopped
  • 2lb cauliflower (1 medium head), florets broken off and stalk roughly chopped
  • 3 oz. potatoes, peeled and roughly diced
  • 1 large onion, peeled and roughly chopped
  • 2 C. milk
  • 2 C. chicken broth / stock
  • Salt and pepper to taste

Put all ingredients except salt and pepper in a large pot and bring to a boil. Reduce heat and let simmer for 10 minutes. Blend until smooth with a hand held blender. Add salt and pepper to taste. For a less thick soup, add more milk, water, or stock. For thicker soup, reduce heat and let soup simmer for a while longer.
