This smooth hummus is packed full of smoky cheddar cheese and roasted cauliflower for a healthy dip with plenty of protein and fiber! Serve it with chips, vegetables, or pita bread.

  • 1 (15 oz.) can chickpeas, rinsed and drained
  • 1 C. roasted cauliflower
  • 1 C. sharp cheddar cheese, shredded
  • 3/4 tsp. smoked paprika
  • 1/4 tsp. cumin
  • 1 Tbs. oil
  • 1-2 Tbs. reserved chickpea liquid, if needed
  • salt and pepper, to taste

Combine all the ingredients except the the salt, pepper, and reserved bean liquid in a blender or food processor. Blend until smooth, adding the reserved bean liquid if needed, or more oil. Season with salt and pepper to taste.
