Try something different this week for your dinner lineup and serve up this simple meat and veggie casserole. This recipe takes the convenience of premade meatballs and pairs it with tender cauliflower in a creamy sauce with plenty of cheese on top!

  • 1 package frozen meatballs
  • 1 T. olive oil
  • 1 onion, diced
  • 1 C. milk
  • 2 T. butter
  • 3 T. flour
  • 1-2 C. cauliflower florets
  • 1 tsp. nutmeg
  • Salt and pepper to taste
  • 2 C. cheddar cheese, shredded

Preheat oven to 350 degrees. Prepare meatballs according to packaging directions and set aside. In a large skillet, heat oil and sauté onions until translucent. Add cauliflower and sauté for a few more minutes. Add butter and allow to melt completely. Sprinkle in flour and mix well; slowly pour in milk and season with salt, pepper, and nutmeg. Bring to a boil and immediately reduce heat to a simmer. Add in about ½ of a cup of your cheddar cheese and simmer for about 8 minutes as sauce begins to thicken. Arrange meatballs in a greased baking dish and pour cauliflower and sauce over and evenly spread. Top with remaining cheese and bake for 20 to 30 minutes until bubbly and golden.
