Creamy Cheddar Cheese Soup
Ingredients
- 1/4 C. butter
- 1/2 C. chopped onion
- 1/4 C. flour
- 3 C. chicken broth
- 3 C. milk
- 1 lb. cheddar cheese, shredded
Directions
In a 3-qt. saucepan, over medium-high heat, cook onions in hot butter for 5 minutes. Stir in flour and cook 1 minute, stirring gradually. Stir in chicken broth; cook, stirring until slightly thickened. Stir in milk and heat just to boiling. Remove from heat. In covered blender, at medium speed, blend 1/4 of mixture and 1/4 of the cheddar at a time until smooth. Return to saucepan and heat just to boiling. Remove from heat.
