  • 1 small onion, chopped
  • 1 Tbs. oil
  • 1 lb. mushrooms, sliced
  • 2 C. chicken breasts, cubed
  • 3 Tbs. flour
  • 1 1/2 C. milk
  • 1 lb. broccoli
  • 1 (5.3 oz) container plain Greek yogurt
  • 1/4 C. light mayonnaise
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 C. Mexican style cheese blend

Preheat the oven to 350 degrees. Grease a casserole dish. Cook the broccoli and set aside. In a skillet, heat the oil over medium-high heat and add the onion and mushrooms. Cook until the mushrooms start to get tender and then add the cubes of chicken. Cook the chicken until it is fully cooked. Drain the pan if needed. Sprinkle flour over the chicken and mushroom mix and stir continuously for 1 minute. Add the milk and bring to a boil. Cook for 3 minutes, or until the mix is thick and bubbly. Add the cooked broccoli and heat for about 1 minute. Add the yogurt, mayo, salt, and pepper. Stir to combine. Pour into the casserole dish, sprink with cheese, and bake for 20 minutes.
