This is a simple dish that can be spiced up with vegetables, like carrots or peppers. The rice by itself is creamy, but to bring it up a level, add a second can of cream of chicken soup. Top it with cheese and serve it with a side of fresh broccoli.

  • 3-4 boneless, skinless chicken breasts, cubed
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 (14 oz.) can chicken broth
  • 1/2 C. onion, chopped
  • 3 C. long grain rice, uncooked
  • 3 C. water
  • salt and pepper, to taste

Put all the ingredients in the crockpot and gently mix together. Cover and cook for 4 to 6 hours on low, or until the chicken and rice are cooked through.
