Creamy Chicken Casserole

Creamy classic perfect for your weekday lunch.

Ingredients

  • Casserole:
  • 2 C. cooked chicken, cubed
  • 9 oz. frozen mixed vegetables, slightly thawed
  • 2 C. elbow macaroni, uncooked
  • 1 C. American cheese, shredded
  • 10 3/4 oz. condensed cream of celery soup
  • 2 C. water
  • Topping:
  • 1/2 C. plain bread crumbs
  • 2 Tbs. margarine or butter, melted

Directions

In large bowl, combine all casserole ingredients; mix well. Pour into ungreased 8" square (1 1/2 qt.) baking dish. Cover tightly; refrigerate 8 hours. Heat oven to 350 degrees. In small bowl, combine topping ingredients; mix well. Stir casserole; sprinkle with topping of 1/2-C. bread crumbs and 2 Tbs. margarine or butter, melted. Bake for 45 to 55 minutes or until bubbly and golden brown.

  • Do you use the wine to saute the Onion and Celery. Did you still use the mixed vegtables. This recipe version sounds very good.

  • Good basic recipe. I made the following changes: Add 1/4 cup dry white wine, start by sauteeing onion and celery then cook chopped chicken fingers and season with rosemary, garlic, oregano, sweet basil and thyme ( or just use premixed "Italian Seasoning"). Also add some parsley to the overall mixture. I added a mix of Asiago Parmesan and Provolone. After it sits in the refrigerator for 8 hours, make and add the topping then place in a cold oven. Set to 350 and let it go for 65 mi

  • This recipe obviously needs seasoning and almost any cheese is better than American but cheddar is the logical choice.

  • I made this and my daughter liked it. Next time I think I'll add chopped onion and more seasoning. It tasted better when I added some Zatarans seasoning. Be sure to thaw the mixed vegetables first. I didn't and the beans were crunchy. I also used Cheddar cheese instead of American. Will make again.
