  • 4 boneless chicken breasts
  • Olive oil
  • 1/3 C. flour
  • ¼ C. butter
  • 2 C. chicken broth
  • 8 oz. mushrooms, sliced
  • ¼ tsp. thyme
  • Salt
  • Pepper

Wash the chicken breast and cut them into thin cutlets. Season with the thyme, salt and pepper. Set aside. Pour olive oil into a saucepan over medium heat. Place the seasoned chicken into the saucepan. Brown them on both sides, thoroughly. Set them aside on to a plate. In the same saucepan, add in the remaining ingredients to make the gravy. Mix well. Let the mixture simmer for 10 minutes. Serve with chicken. Enjoy!
