  • 1 bag fresh baby carrots, halved
  • 1 lg. onion, diced
  • 2 celery stalks, diced
  • 3 C. peas
  • 3 C. water
  • 1 chicken boullion cube
  • 1 can cream of mushroom soup
  • 1 lb. leftover cooked chicken, diced

Place carrots, onion, celery and peas in a crockpot. Mix 3 C. of water with chicken boullion cube and add to crockpot. Cover and cook on high for 3 to 4 hours. With a ladle, remove about 1.5 C. of chicken broth. Add soup and the diced chicken. Stir well and cook for another 30 minutes. You can keep this simmering on low until ready to serve.
