This creamy chicken stuffing recipe is pretty simple to make and even easier to eat. This dish is perfect for the season and bursting with lovely undertones of thyme.

  • 3 C. Stuffing Mix
  • 1 ½ C. chicken, diced
  • ½ C. chicken broth
  • ½ C. whipping cream
  • 2 medium yellow onions, chopped
  • 2 Tbs. thyme, chopped
  • 1 Tbs. garlic, minced
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 2 eggs, beaten
  • 1 ½ C. shredded cheddar cheese
  • ½ stick of butter
  • 3 Tbs. flour
  • Parmesan for topping

Melt the butter on medium-high in a large skillet and add in the chicken and flour. After about 7 minutes, throw in the garlic and onion. The mixture should start to thicken. Combine the eggs and broth and pour it into the skillet. Add in the whipping cream, thyme and rosemary. Season the mixture with salt and pepper. Toss in the stuffing mix and stir. Fold in the cheese. Preheat the oven to 425 degrees and bake the casserole for 15-20 minutes. When the casserole has set, take it out of the oven to cool. Top it with parmesan and enjoy.
