1 casserole


  • 4 1/2 Tbs. butter
  • 1/2 C. flour
  • 1 Tbs. sugar
  • 1 tsp. salt
  • 1 C. milk
  • 1 can cream-style corn
  • 1 can kernel corn
  • 1 lb. frozen spinach, thawed and drained thoroughly
  • 3 eggs
  • 1/2 chopped onion

Melt butter in a saucepan and add flour, stir. Add in milk, sugar and salt and continue to stir until thickened. Remove from heat and add cream-style and kernel corn. Beat egg yolks and add to the corn mixture. In another bowl, beat egg whites and fold into the corn mixture. Fold in spinach. Transfer to a casserole dish and bake for 45 minutes at 350 degrees.
