Creamy Crockpot Chicken & Rice Soup

  • 1 lb. boneless, skinless chicken breasts
  • 1/2 C. uncooked brown rice
  • one 10-oz. can cream of chicken soup
  • one 10-oz. can cream of celery soup
  • one 14-oz. can chicken broth with roasted garlic
  • one 16-oz. pkg. frozen sliced carrots, thawed
  • 1 C. half-and-half

Cut chicken into 1-inch pieces. Place pieces in sprayed 4- or 5-quart slow crockpot sprayed with vegetable cooking spray.  In bowl, mix rice, soups, chicken broth, and carrots. Pour over chicken.  Cover and cook on low for 7-8 hours.  Turn heat to high, add half-and-half, and cook another 15 minutes.

  • This creamy crockpot chicken and rice soup was great! I doubled the recipe for my big crockpot, made it for church and left out the garlic because it was for the morning service and it was still great. SO easy, and everyone wanted the recipe. I'll definitely make it again when I'm on hospitality duty.
