A simple potato soup that's filled with cheesy goodness!

  • 6 med. potatoes, peeled and cubed
  • 1 onion, very finely chopped
  • two 14-oz. cans chicken broth
  • 1/2 tsp. white pepper
  • one 8-oz. pkg. shredded American cheese
  • 1 C. half-and-half

In a slow cooker, combine potatoes, onion, broth, and white pepper.  Cover and cook on low for 8-10 hours.  With potato masher, mash potatoes in slow cooker.  About 1 hour before serving, stir in cheese and cream and cook 1 more hour.
