Tomato soup was a staple in my house, especially when paired with grilled cheese sandwiches. This creamy twist on an old favorite is easy to prepare in a crockpot and tastes even better since it's homemade!

  • 2 Tbs. melted butter
  • 1 medium onion, finely chopped
  • 1 Tbs. flour
  • 2 (28-oz) cans diced tomatoes, undrained
  • 1 C. vegetable broth
  • 3 oz. cream cheese, chopped
  • salt, to taste
  • pepper, to taste

In a crockpot, put the butter, onion, flour, tomatoes, and broth. Cook on low for 5-6 hours or until tomatoes are soft. Pour the mixture into a blender or food processor. Add the cream cheese and mix until smooth. Season with the salt and pepper before serving.
