Creamy Cucumber Dressing

Try this pretty, homemade dressing with a spring mix salad for your dinner guests.

Ingredients

  • 1 C. finely chopped, peeled cucumber
  • 1/2 C. finely chopped green pepper
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/3 C. yogurt
  • 1/3 C. mayonnaise
  • 1 Tbs. prepared horseradish

Directions

Combine all ingredients in medium bowl and mix well. Chill for 30 minutes before using. Makes 2 C. of dressing. Note: You can also puree the entire dressing in a blender if you prefer it smooth
