  • 3lbs red potatoes, washed and chopped
  • 1½ cups celery, diced
  • 3 tablespoons green onion, finely chopped
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons lemon juice
  • 5 tablespoons fresh dill, minced
  • 2 tablespoons Dijon mustard

Boil the potatoes for 15-20 minutes, or until tender. Drain and cool completely. In a large bowl, combine all of the ingredients including the cool potatoes. Refrigerate for 1 hour before serving.
