Creamy Eggs over Toast

This recipe can be easily modified by adding ham or sausage. I have served this many times at Easter Brunch. Enjoy!

  • 3 hard boiled eggs, chopped
  • 8 oz. cream cheese
  • 1 C. sliced mushrooms
  • 1/2 C. chopped onions
  • 1 Tbs. butter
  • salt and pepper
  • bread or english muffins for toast

Sautee the mushrooms and onions in butter over medium heat. Add the cream cheese. Add the chopped hard boiled eggs. Add salt and pepper to taste. Serve over toasted english muffins or toast.
