Ingredients

  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 medium carrot, peeled and diced
  • 1 medium potato, peeled and diced
  • 1 qt. chicken stock
  • 1 (14.5-oz.) can chicken broth
  • 2 (15.5-oz.) can Garbanzo beans, drained
  • 2 bay leaves, broken in half
  • 3/4 C. quick cooking barley
  • 1 tsp. dried parsley

Directions

On a skillet with olive oil, saute onion, celery, carrot and potato for about 5 minutes or until onion is tender. Pour in saucepan over medium heat. Add chicken stock, chicken broth, garbanzo beans, kidney beans, butter beans and bay leaves. Stir to combine ingredients and cook, stirring occasionally, for 10 to 15 minutes or until well heated through. Add barley then cook until barley is tender. Sprinkle with parsley before serving in bowls.
