  • 12 oz. rotini Pasta
  • 4 C. broccoli (fresh or frozen)
  • 1 C. carrots, grated or sliced
  • 1 T. unsalted butter
  • 3/4 lb. boneless, skinless chicken breast, chopped
  • 4 cloves garlic, finely chopped
  • 1 can condensed cream of chicken soup
  • 1/2 C. milk, 2%
  • 1/2 C. water
  • 3 oz. cream cheese, cubed and softened
  • 1/2 C. grated parmesan cheese
  • salt and pepper to taste

Cook pasta as directed on box, adding in broccoli during the last 2 minutes. Drain well. In a large skillet, melt butter over medium heat. Add chicken, garlic, salt, and pepper. In a medium bowl, whisk soup, milk, water, and cream cheese until smooth. Pour soup mixture onto chicken and add carrots. Bring to a boil and reduce to low heat. Simmer until chicken is fully cooked. Remove from heat and stir in Parmesan. Pour mixture over pasta and toss together.
