  • 1 T. olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 C. frozen peas
  • 2 C. broccoli florets
  • 8-10 asparagus spears, trimmed and chopped
  • 3 C. vegetable stock
  • Salt and pepper to taste
  • 3 T. chives, chopped
  • ¼ C. plain Greek yogurt

In a pot, heat oil and sauté onion and garlic until softened. Add in peas, broccoli, and asparagus, sauté briefly, and pour in vegetable stock. Season with salt and pepper, bring to a boil, reduce heat, and simmer for 15 to 20 minutes until vegetables are tender. Stir in chives and use an immersion blender to blend until creamy. Mix in yogurt, heat for a few minutes, and serve.
